The Foundation of Sierra Leonean Cooking

Rice is the staple of Sierra Leonean food — eaten at nearly every meal, by almost everyone. The saying goes: "If you haven't eaten rice, you haven't eaten." Rice is served with a variety of sauces, stews and soups, and the quality and flavour of these accompaniments is what defines a great meal. Local varieties of short-grain rice are preferred over imported long-grain.

Essential Dishes to Try

Cassava Leaf Stew (Plasas)

This is arguably Sierra Leone's national dish. Finely ground cassava leaves are slow-cooked with palm oil, dried fish, meat (chicken or beef), onion and spices into a thick, intensely flavoured green stew. Served over rice. Rich, earthy and deeply satisfying — you will either love it immediately or learn to love it. Most visitors do.

Groundnut Soup (Peanut Stew)

A thick, creamy stew made from ground peanuts (groundnuts), tomatoes, onions and your choice of meat or fish. Often slightly spicy. One of the most universally enjoyed dishes for international visitors because the flavours are approachable — think a more complex West African satay sauce over rice.

Jollof Rice

Jollof rice needs no introduction to West Africa enthusiasts — tomato-based one-pot rice cooked with peppers, onion and spices. Sierra Leonean jollof has its own regional character, often slightly drier than Ghanaian or Nigerian jollof. A safe and satisfying choice for first-timers.

Grilled Fish (Frejon & Barracuda)

Sierra Leone sits on the Atlantic coast and fresh seafood is abundant and excellent. Whole fish — typically barracuda, snapper or tilapia — are grilled over charcoal and served with fried plantain and pepper sauce. The best grilled fish is found at beach-side sellers in Lungi and at market stalls in the evening. Expect to pay NL 20,000–50,000 (under USD 2).

Pepper Soup

A spicy, thin broth made with goat, chicken or fish, heavily spiced with black pepper, grains of Selim and fresh chili. A comforting dish often eaten in the evening or when feeling unwell (locals swear it fights off colds). Available at most chop houses and local restaurants.

Fried Plantain

Sweet, caramelised slices of ripe plantain fried in oil. A universal side dish or snack, available everywhere at any time of day. Perfect with rice, with grilled fish or on their own. One of the most addictive foods in West Africa.

Street Food in Lungi and Freetown

The street food scene around Lungi Airport and in Lungi town is vibrant, especially in the evenings. What to look for:

Tap water is not safe to drink. Sealed bottled water is available everywhere and costs NL 5,000–15,000 (under USD 1) for 500 ml.
